This knocking noise had been an issue for me for a while. I heard it only on summers. No knocks on winter or even on summer when starting the journey and car was still cold. Or maybe I just didn't drive it as hard when it was cold. Either way had the knocks on hard cornering and on the hotter days.
Replaced the original bolts with the Audi bolts. Must say, they looked very similar with the OEM, not like the "black ones", you can see on GTI pictures on vw forums.
But they definitely were loose and there ware noticeable marks on frame where you could see that the sub frame had moved for couple of millimetres left and right (or back and forward).
Changed four bolts. Just bolts, no shims.
Inner bolts are M12*1,5*110. They are 110 mm long. Audi part number: N 908 23 501
Outer bolts are M12*1,5*90. They are 90 mm long. Audi part number: N 910 39 802 (Superseded from N 910 39 801- same bolt, new part number)
Torqued them all to 110NM (81ft-lbs) + ¼ turn.
Quiet at the moment (two days gone past) and feels a lot better/firmer on corners

Car is 2007 yr. Cupra and have done 80 000 km / 50 000 miles.
