Long-running intermittent throttle pedal problem

Going back two or three years, my exeo has been throwing up throttle pedal position fault codes, causing ABS/TPMS/coil/engine management lights to come on, and then limp mode. On a couple of occasions the pedal has entirely stopped working for a period. Often stopping and starting again is enough to cure the problem, but sometimes (perhaps mostly in very wet weather?) it persists for hours/days.

We have changed the accelerator pedal (for a used one), and put in a new throttle body, and checked/cleaned connections, but nothing seems to make any difference.

Where next? I don't really want to spend £200 on a new accelerator pedal if that's not the problem.

We are now sure this problem is being caused by water/damp - it's been very dry here for months and we've had no issues, but after a sustained half day of heavy rain, and a torrential downpour overnight, the same issue is back. Later in the day, once dry, the fault codes have gone away again, and haven't recurred (yet!).

Reasonably certain the issue is not with the throttle itself, and I don't think it's the pedal either. What else could it be? A wiring or connector issue? Or water getting in the ECU maybe??

Anybody have any ideas what I could try next?
