Is it using / losing coolant or simply overheating?

Sounds like an airlock but that would be odd if you've not touched the cooling system at all.
I reckon you should pressure test the system as there may be a small leak somewhere.
Have you checked the oil cap and dipstick for any water contamination?

Sometimes the resistor can fail in the fan pack which means they can only turn at emergency high speed, not normal speed.

So you have no fan, get to 105 and then they'll turn on at hurricane speed. Then the process repeats once it's cooled down.

Do your radiator fans turn with your air con on? They should turn at a constant speed if your low speed fan setting is operational.

Although the fans commonly fail this wouldn't explain the nearly acquired gargling in the cooling system.

I was going to do the resistor mod until I ran it past my electrical engineer mate and he was horrified and said it was a fire risk.
So I bought and fitted the NIME box instead, although I think they're impossible to get hold of now.
Even that was a faff, so if it happened again I'd just get a whole new fan pack. Not a big job for a garage. The parts are cheaper nowadays - it used to cost a fortune if your MkIV Golf had it and it was the mid 2000s.

Resistor mod is perfectly ok as long as you use the right cable and resistors and mount them on a proper metal plate away from anything combustable. Any of the big component suppliers should have them, rs components, mouser etc etc.

The other option is Autodoc as they do a huge range of replacement parts for the MK1. They have individual fans complete with the motors for around £40, (would have to check they have the resistors in them, pretty sure they would though) and you can get a whole replacement fan unit for between £100-£150 depending on the quality.

If money is tight then the first option is probably possible for £40 or £50, but it's a lot of faffing around, for the extra few quid i'd probably opt for the autodoc option.

If you want to go down the resistor mod route then everything you need is here. It's for a mk4 golf but it's identical to ours in terms of parts, although maybe the shape of the metal panel may need to be different for ours. http://www.billswebspace.com/VWMKIVClimatronicFanRepair.htm
