Not all Leon's have a full undertray, are you sure its missing?

Thing is the undertray holds the side parts in place as well. Not sure how much an under tray is.
 
The undertray on the petrol Leons is quite small. It still keeps road spray and dirt away from the engine and helps the airflow through the engine compartment and under the car. TDI's and LCR's have larger trays that go back as far as the floorpan. I would replace it, but many seem to do fine without one.

I just made my own from galvanised steel, does a great job and takes a good whack too, which it does lol

hehe, this picture above has for sure nothing to do with the topic with or without undertray!
on this last picture you have just given your engine a clean, its still wet, if you look on all the rubber hoses and on the battery fuse cover and airbox you can still see some of the engine clean/water. :p
also the first picture, your engine could also look like this if your car had an undertray on, this is quite common as the car is not new any more.

The thing is though my engine still looks like that due to having an under tray, as you can see in the first pic it got pretty manky without one. So it's definitely on topic lol
