is it deffo the head gesket?any sign of oil in the coolant tank?you can see a floating bit of oil in the light if you look carefully.
was the engine all good before you changed the stat?head the engines are pretty bomb proof before i looked into getting the cupra never heard of the head going?if you go to halfords they got a tester to see if your geaket is/or going.
I read some where that if your water pump was on the way out the pipe at the top of the coolant tank would not be flowing out water.(de gasing pipe i think its called on the R5 it had the same thing)

I have had a new water pump 2 weeks ago. It was doing the same before I changed the stat it's only just on its way the coolant is pressurising too and the top hose to the expansion tank is running into bottle fine and gets more when I rev

In the nicest possible way here, take it to a garage as you don't know what's going on with it.

not good there then mate your car you have is the desiel version?bit of a random one for the gasket to go there esp desiel as well is the car on the high miles or not?have you any ideas on how this could of happened?

No not got a clue the garage sed it couldn't be anything else. The coolant system is pressurising and loosing water and the temp gauge starts to go up to near 110 then drops after 2 mins the temp has only gone up twice though
