I thought the larger the offset, the further away from the car the centre line of the rim would be?

You are getting it wrong mate. the offset relates to the distance the face of the wheel sits from the centerline of the wheel. The bigger the number the further the wheel is sat towards the car, lower numbers mean the wheel sits further away from the car.

It is best to try and stick as close to the manufacturers recommendation as possible.

I see, so - in theory - a 8J 50ET rim with a 5mm spacer would give the same positioning of the rim relative to the car as a 8J 45ET rim?

Not that this is what I'm looking to do, just to clear this up in my mind!
