I put a brand new MAF into my car today and its still underpowered. The only code it's bringing up is this...

coolant temp sensor mate,i changed mine and its literally a 5 min job,on the RHS of the engine under the small perforated plastic cover is a small plug with either a green or black body. there is a small plastic c clip holding it in,when the engine is cold remove it and replace with a genuine OEM item, you will lose the contents of the cooland ball in the process so be ready to top it up again when done, warm the engine slowly with the bottle top open and keep an eye on the level, top up as necessary

Can also be the thermostat not holding temperature (90 degrees) so the cts reports a fault as the stat doesn't have it's own sensor.
Is the gauge a solid 90 or does it move around?

Stat gets my vote and tbh only swap with genuine hearing to many stories lately of failed non genuine stats and cts sensors. Seremotors on here is your best bet for a good price for genuine goods.

I think I read somewhere that if the sensor is knackerd it tells the ecu it isn't up to temp and doesn't let the car reach full boost pressure or fueling or something because it thinks the car is still cold. May be wrong tho but that could be why it's underpowered!

No that's wrong, if they are faulty you inject more fuel as the engine is not up to optimum operating temp (90) so you get less mpg.

I replaced the coolant sensor and its still underpowered, it's bringing this fault up now
