Have done the search but cannot find anything problem that is the same so here goes...
When sat in traffic and it also did this in a car park, the temp needle rises above 90 degrees and through to 110 degrees and the fans were not kicking in. As we were in Germany, I took it too a local garage who had a Seat racing team and they had a look. We ran the car and watch the temp needle rise. The car was switched off and they released the pressure from the coolant bottle and we watch the coolant boil out of the tank!!
I had the fan sensor replaced the next day, and it seemed to solve the problem. They advised this as this had recently happened to one of their racing cars.
Then yesterday, I was in a car park and the same thing happened after a couple of minutes. So I switched the engine off, left a couple of mins and then back on again. The same thing happened, so I switched it off again, left a couple of mins and then back on. This time at about 95 degrees the fans switched on and were spinning on the top speed. The temp dropped back down to normal. A couple on mins later they came on again, as normal, but again was on the top speed setting.
Now I have read about the resistors and fuses blowing and knocking out the low speed setting, however, when I switch the air con on, both fans spin on the low setting for a couple of mins and then off and on every couple of mins as per normal. There is also now blown fuses.
I am at a loss and the couple of places I have spoken too are as well, so does anyone have any ideas??
So to recap, when overheating, the fans sometime's kick in but only on the high speed setting.
When the aircon is on, the fans spin on the low setting as per normal every couple of mins.
There are no blown fuses etc.
