On the Cupra it's an ESP button by the handbrake. Pressing it causes an orange 'car with swervy skid marks' (like the 2nd image Dave posted above) light to light up inside the speedo.

I actually tried this myself today, and i pressed it and nothing happened, but then i pressed it again but moved my finger towards me and pressed it quite hard and it came up, but mine flashes if it is off! is this normal??????

Could be something wrong then?

Also what is that button next to the ESP, it says SET or something, what does it do?

That's for setting the tyre pressure monitoring system - check all the pressures are correct and then press and hold the button to set the system - then if one tyre loses pressure the warning will sound.

I think if its permanently flashing this means there is a fault on the system, or i think thats what i read in the manual

It's not permanently flashing, (just read my post and it didnt make sense) just when i turn it on,

Alex cheers mate :) and unlucky for the button lol
