Ok, just had to drive home from work at 20mph. If I go over 2000rpm the temp starts to rise so I've had to do the whole going down hills with the clutch in scenario. So it looks like the water pump.
Just picked the car up from JBS. Had the cylinder head pressure and crack tested, no problems there (phew). Had the cambelt and water pump changed because they were due anyway but the problem turned out to be the thermostat.
So, problem solved and thanks for everyone's input.

Omg the thermostat I was right! lol. But does the CTS read over 90s or not ? I would like to know for sure, i guess it doesn't since you said your CTS/CC was 90' whilst your needle was 110 ;/
I had second thoughts after some the other reply's but I had this happen to me on my old Renault 5 stuck shut so I just took it out..
