If you want to reduce road noise, add sound deadening under the rear bench and along the rear arches. Made a huge difference to mine.Did the soundproofing job during the weekend. 2 packs of cheap chinese sound deadener plus some insulating "carpet" which is usually what manufacturer choose for doors and lining.
Decent overall job...road noise had minimal reduction (tried some before-after decibel measurements with a phone app and it showed -1db on the same road and speed) but the sound of the infotainment is massively improved and the doors have now a premium sounding feel when opening/closing. I would say that now the doors sound and feel more premium than my Q5 and waaay more premium than an A3. There is also a significant improvement of how the car sounds when going over pot holes. It feels more solid and I may have also killed some of the very few rattles I had.
Would I do it again? Probably yes but I would probably go an extra mile with better materials like Dynamat or StP.
So I was inspired by your "aero kit" posts and I went on to order the rear left exhaust cover (5Q0825206K cover for independent rear suspension) and the 2 front arms covers (5wa407117&118).Installed the Golf 8 front suspension arm aero covers today. Not sure if it has any noticeable fuel-benefits but they were ultra-cheap and it adds a bit of the next generation to my car, which is always cool.

I have to report back that none of them is plug n play on a MY2019 Cupra. Actually the arm's covers do not fit at all and nothing can be done on them in order to fit. The overall shape seems correct but the holes for the rivets don't match those of the arm. That's really weird since according to my research all Leons 5F are fitted with the same arms no matter the trim level. I will give it one more go when I get the chance to have the car lifted.
On the other hand the exhaust cover can be fitted but again it's no plug n play. There are obvious workarounds to make it fit and I had to use some hardware of my own and one bolt that also holds the silencer heat shield.
For the record...
It seems that the 2 front arm covers are also used on the MK4 but this uses 5WA407151A & 5WA407152A control arms (new generation for Golf8) and I don't know what difference they might have in shape with the 5Q0 arms that the MK3.5 uses.Hmmm that's strange.. On my torsion-bar suspension it was all mostly plug&play!
Well if your car was made after December 2019 it may as well have MK4 generation 5WA arms and not 5Q0. I've noticed some differences in ETKA regarding holes and shape.
