Cupra R temperature gauge coolant warning light

right, i've tried a few searches on the subject and got some info, but im looking for a bit of clarification on it, just for my own piece of mind

I have a 2002 mk3 ibiza cupra R, every morning when i start the car from cold (regardless of outside temperature) the coolant level warning light is illuminated and gives the 3 annoying beeps.

The light stays lit for a few minutes and then extinguishes and doesn't come on again. it will only re-illuminate when i start the car from cold again, or if the car has had significant time to cool down (6-7hrs).

Now it has done this since i bought the car in march. The temperature gauge progressively increases as the car heats up and reads normally, sitting bang in the middle of the gauge - 90degrees. It also does not move from that position, and the fans operate as they should.

The coolant level is just below the max line when cold.

The length of the light staying on is consistent i.e it seems to be on for the same length of time eveytime it comes on.

So, my question is, does it sound like a coolant level sensor fault and if so is it a replacement expansion tank that is required to fix the fault? or is it something more serious?
