not sure how drivable or reliable the car will be with stage 2+ though for everyday driving.

I concur, no different to drive day in day out. Very well mannered, drives as well as it did before. Just goes like the clappers when you put your foot down.

Even Stage 3+ 2.0TFSi big turbo cars drive normally.

At the end of the day the accelerator is a variable power regulator, not an on/off swith.
