There should be a sticker in the boot with the information you need. This will give a build date and the code PR-1N3, PR-1N5 or PR-1N7. With these pieces of information, you can look up the part number in the table provided by @Seriously? .

Some of the part numbers have an X at the end. This is accompied by the comment "Detail of the restored at the factory". I'm guessing that these are refurbished parts?

I guess that it might denote steering racks are 'exchange' parts.

Yes, a "body" allowance is changed over and above the initial cost, with that part of the cost being returned or removed when handing in a suitably intact part for exchange. VW Group have been doing this for many years, I seem to remember buying an "X" water pump for my wife's 2002 Polo in 2006 when it got its first cam belt change.

It might help if you posted a photo that is in focus!

The number you're looking for should be on the RHS, a little over half way down. It looks like it's there in your photo but it's impossible to read.

From your VIN number it also lists PR code: 1N3

and then the part number for the steering rack as 5Q2 423 055 L

I would still do your due diligence - and call a Seat dealer parts dept, and ask for a price and part number for the rack linked with your reg to 100% make sure you are getting the correct part number.

The photo you shared wasn't the rack part number. The part number will probably have a QR code next to it on the label.
I believe that part number I shared is correct but it's relying on the part catalog I have access to (it's a none genuine one - but can do VIN look-ups) - but I can't confirm 100% - for your car - so If I were you i'd try and double check that part number from another source.
If you search google with that OE number you can see there have been loads of iterations/supersessions of that number (different letters on the end) and L is the latest.
