ive just changed my green top temp sender unit as my temp gauge never moved off 60. since changing the temp gauge works but when i go into the climate setting 51 that is reading 90 and the gauge is reading 70ish

The dash is usually 'ahead' of the climate, so if the gauge reads 90 then the climate will be lower, until its properly up to temp, then the climate stops at 90. Only way to see if its reading higher is via vag-com, a liquid gauge or via a fault code reader that provides live data.
